Ingredients

  • cups Chicken (fully cooked - cut into bite size pieces)
  • 8 pieces Bacon (cooked and crumbled)
  • 1 10 oz pkg Frozen Mixed Vegetables (cooked and drained)
  • 8 oz Shredded Cheddar Cheese
  • 1 10.5 oz can Cream of Chicken Soup
  • ¾ cup Milk
  • cups Bisquick
  • cup Milk
  • 1 2.8 oz can Crispy Fried Onions (Durkee)
  • 1 cup Chopped Tomatoes (optional)

Instructions

  • Preheat oven to 400 °F
  • In a greased 9x13 pan, combine or layer cooked chicken, cooked bacon, mixed vegetables, (tomatoes if using them), and about 6 ounces of cheese. (Reserve a little bit of cheese for the topping).
  • In a small bowl, mix the cream of chicken soup and ¾ cup of milk and mix well. Pour over casserole.
  • If you are like me and a little unsure of those dark meat chicken pieces in Cream of Chicken soup, you can remove them now before you pour the mixture over the casserole.
  • Cover with tin foil and bake at 400 for 20 minutes.
  • In a medium bowl - combine 1½ cups Bisquick, ⅔ cup of milk, and half the can of onions.
  • Drop the Bisquick mixture by spoonfuls to form 6-8 biscuits evenly spaced over the casserole. Bake uncovered 15-20 minutes until the biscuits are light brown.
  • Top with remaining cheese and fried onions. bake for 2-3 minutes until cheese is melted and onions are toasted.
