So this OG recipe straight from my Mom’s cookbook does not specify *how* to cook the chicken that goes in the casserole. I do remember when I was a kid, she would boil the chicken for this recipe (I remember it because I HATE the smell of boiling chicken) lol! I do also remember her taking short cuts and buying a fully cooked Rotisserie chicken from the Publix deli and shredded it to use in this recipe. I grilled the chicken on my George Foreman grill, and you can see in the ingredient pic I used some already-seasoned chicken breast. It’s not necessary. The original recipe does not call for the chicken to be seasoned, so that is optional. I have had it a dozen or more times with non-seasoned chicken and it turns out good, so personal preference really.
Also to note – the tomatoes are optional. I personally like it with the tomatoes, but I have a tomato hater in my household, so I usually leave them out or only put them on half of the dish.
Country Chicken & Biscuits
Ingredients
- 2½ cups Chicken (fully cooked - cut into bite size pieces)
- 8 pieces Bacon (cooked and crumbled)
- 1 10 oz pkg Frozen Mixed Vegetables (cooked and drained)
- 8 oz Shredded Cheddar Cheese
- 1 10.5 oz can Cream of Chicken Soup
- ¾ cup Milk
- 1½ cups Bisquick
- ⅔ cup Milk
- 1 2.8 oz can Crispy Fried Onions (Durkee)
- 1 cup Chopped Tomatoes (optional)
Instructions
- Preheat oven to 400 °F
- In a greased 9x13 pan, combine or layer cooked chicken, cooked bacon, mixed vegetables, (tomatoes if using them), and about 6 ounces of cheese. (Reserve a little bit of cheese for the topping).
- In a small bowl, mix the cream of chicken soup and ¾ cup of milk and mix well. Pour over casserole.
- Cover with tin foil and bake at 400 for 20 minutes.
- In a medium bowl - combine 1½ cups Bisquick, ⅔ cup of milk, and half the can of onions.
- Drop the Bisquick mixture by spoonfuls to form 6-8 biscuits evenly spaced over the casserole. Bake uncovered 15-20 minutes until the biscuits are light brown.
- Top with remaining cheese and fried onions. bake for 2-3 minutes until cheese is melted and onions are toasted.
