I often buy bananas with the intent of a healthy breakfast add-on. Then they sit so long they start to turn brown, so I end up making banana bread instead. Oh well, it’s delicious! And so easy… I don’t even get out the electric mixer for this, just a whisk!

Ingredients
- 3 Ripe Bananas (starting to turn brown ripe!)
- 1 Egg
- ⅓ cup Melted Butter
- 1 tsp Vanilla
- ½ tsp Baking Soda
- 1 pinch of Salt
- 1 cup Sugar
- 1½ cups All Purpose Flour
- 1 cup Dark Chocolate Chips
Instructions
- Preheat oven to 350 °F
- Mash the peeled bananas in a large mixing bowl. (I use a potato masher, but a fork will also work).
- Add the egg, melted butter, and vanilla and mix well.
- Add the salt, sugar, and flour and mix well.
- Add in the chocolate chips.
- Pour mixture into a greased loaf pan and bake for 55 minutes at 350 °F
- Let stand for at least 10 minutes before cutting.
