Banana Bread

I often buy bananas with the intent of a healthy breakfast add-on. Then they sit so long they start to turn brown, so I end up making banana bread instead. Oh well, it’s delicious! And so easy… I don’t even get out the electric mixer for this, just a whisk!

Ingredients

  • 3 Ripe Bananas (starting to turn brown ripe!)
  • 1 Egg
  • cup Melted Butter
  • 1 tsp Vanilla
  • ½ tsp Baking Soda
  • 1 pinch of Salt
  • 1 cup Sugar
  • cups All Purpose Flour
  • 1 cup Dark Chocolate Chips

Instructions

  • Preheat oven to 350 °F
  • Mash the peeled bananas in a large mixing bowl. (I use a potato masher, but a fork will also work).
  • Add the egg, melted butter, and vanilla and mix well.
  • Add the salt, sugar, and flour and mix well.
  • Add in the chocolate chips.
  • Pour mixture into a greased loaf pan and bake for 55 minutes at 350 °F
  • Let stand for at least 10 minutes before cutting.
