S'mores Bites

All the flavor of a traditional bonfire s'mores, but with less mess!

Equipment

  • Mini Muffin Baking Pan

Ingredients

  • 1 cup Crushed Graham Crackers (one sleeve of eight crackers equals one cup)
  • cup All-Purpose Flour
  • cup Sugar
  • ½ cup Light Brown Sugar (packed)
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • ½ cup Melted Butter (one stick)
  • 1 Egg
  • 12 Large Marshmallows (halved)
  • 24 Squares of Hershey Chocolate (I use the 10-pack of the minis Hershey bars)

Instructions

  • Preheat the oven to 350 °F
  • Spray mini muffin baking pan with non-stick cooking spray and set aside.
  • Combine all dry ingredients (graham crackers, flour, sugar, brown sugar, baking soda, and salt) in a large mixing bowl.
  • Add the melted butter and egg to the dry ingredients. Mix well.
  • The mixture is going to seem a little more "fall apart" than cookie dough, and that's ok!
  • Scoop tablespoon size balls of the dough and roll with your hands. Then, firmly push the balls into the muffin molds on the baking pan. The dough should not be level with the pan, but rather slightly below.

  • Bake for 8 minutes at 350 °F
  • Right after baking and while the dough is still warm - using a teaspoon, press down and make a dent into each of the cups to make room for the marshmallows. Add the marshmallow halves to the cups.

  • Broil in the oven for 2 minutes on high. Immediately after broiling, add the pieces of chocolate to the tops of the marshmallows.

  • Let set for 15 to 20 minutes. The chocolate will get melty and runny, then firm again.
